sparked by innovative Nordic influence. In Norway, the wealthiest
country in the region, Adam's inside Oslo's Mathallen Food Market, the
new central hub for high end food and culture where he makes traditional
Norwegian waffles. At Oslo's ground breaking two Michelin star
restaurant Maaemo he goes behind the scenes with head chef Esben Holmboe
Bang. Then in west coast Bergen, he catches sustainable brown crabs and
cooks up a seaside Norwegian Krabbefest before meeting the indigenous

Episode Seven:
Adam is 78 degrees north in the remote Artic Svalbard archipelago where he visits the worlds most northern fine dining restaurant, Huset. He meets Jason Roberts, an Australian thats lived in Svalbard for 20 years before entering a 1930s Moelven wooden barrack adorned with mining and hunting memorabilia. Here, Adam makes the famous Norwegian Salmon Gravalax before ending his trip at the Global Seed Vault. Kept in arctic conditions, the vault stores a backup copy of the worlds agricultural seed for use in case of a man-made or natural disaster.

In the nearby fjords in Bergen, Adam catches some of Norways abundant sustainable brown crabs and makes a Krabfest, then travels to the far north of Norway to spend time with the indigenous Sami people for some reindeer herding and traditional Sami food.
